"This Cabernet Sauvignon rosé is a wine that I have desired to make for a very long time. Achieving a scenario where the fruit sensations are ripe but NOT accompanied with elevated Brix is a backwards dynamic and not easily found. Vintage 2018 and one block of Cabernet Sauvignon was identified by Chris Protonentis (assistant winemaker) as being one that had this potential. We purchased the fruit, hand harvested and sorted it, cold soaked for 5 days after crushing, cool fermented in stainless steel then aged for 8 months in French oak barrels. It is billed as “Ontario’s highest flying Rose” as it comes in at $35.95 per bottle. The package is a heavy weight flint vodka bottle that gives the wine the presence on the table that it deserves. "
The Windsock Cabernet Sauvignon Rosé's bright pink colour suggests fun, sweetness and whimsy, but this wine is anything but that! The Windsock is a a structured, weighty rosé. Aromatics of oak and red fruit complement the wine's complex palate. You will sense vanilla, cedar, crabapple, mint and red berries, with an undertone of tobacco. Dry. Weighty. Round. Medium-bodied.
